I don’t know about you guys, but this is a frighteningly accurate portrayal of my mood on any given day of the week:
So given that it’s a Sunday night, you can bet I need a little pick-me-up as I plan for the week ahead. I decided to make a big batch of my favorite Farro Salad to bring to work for lunch this week!
- 4 cups water
- 12 oz Italian pearled farro
- 2 tsp salt
- 1 pound tomatoes (chopped)
- ½ of a large sweet onion (chopped)
- ¼ cup diced chives*
- ¼ cup finely chopped fresh parsley*
Combine water, farro, and salt in a saucepan, cover and bring to a boil. Once boiling, simmer on medium-low heat for 15-20 minutes. Drain the farro and transfer to a large bowl. Add the tomatoes, onion, chives, and parsley to the farro and combine.
*Note: I’ve also substituted scallions for the chives and cilantro for the parsley.
It should look a little something like this:
Whisk together the vinaigrette ingredients, add to the salad, and mix thoroughly.
- 1 large garlic clove (diced)
- 2 tbsp balsamic vinegar
- Salt & pepper to taste
- ¼ cup extra virgin olive oil
And voilà! Healthy deliciousness ready for your week! I keep the batch stored in the fridge all week, but I like to eat it at room temperature.

Top it off with this beautiful sunflower bouquet I picked up at a bodega down the street from me yesterday, and the fact that My Best Friend’s Wedding is now on Netflix (!!), it was a pretty good weekend :).
