Wine Wednesday: Homemade Pizza and Pinot Noir

You may have guessed that a fan favorite meal in the Laferrera household is pizza. And you would be correct.

On Monday night, AJ made one of his specialties, a Mozzarella, Prosciutto, and Caramelized Onion pizza. He uses fresh dough, our grocery store only sells frozen, but we will pick up a ball of dough from a pizza shop down the street.

After rolling out the dough, he tops it with a thin layer of tomato sauce, sliced fresh mozzarella, covers that with prosciutto di Parma, and finishes it off with caramelized onions that he sautés in olive oil for a couple hours over a low flame. It then bakes for about 20 minutes.

This is the most delicious pizza. I’m not just saying that because I want AJ to keep making it for me (I do), but I really mean it! I ate 2 slices, was stuffed, and still went back for a small third because I couldn’t get enough of it!

What goes best with pizza? Wine! While personally, I think any kind will do here, I tend to gravitate towards red. A red that I recently became a fan of is The Pinot Project

This is a California Pinot Noir that is pretty light on your palette, but pairs well with your meats and cheeses. It’s also very reasonably priced so it’s generally my go-to, particularly if I’m hosting a party or bringing a gift.

I hope you all watch the Unbreakable Kimmy Schmidt on Netflix! It also pairs perfectly with pizza 😉
