Good afternoon guys! I hope you’re having a great Monday. I’m really excited to share my lunch with you today. Since this weekend was a little bit lazy, I didn’t quite plan or prep my lunches like I should have. Figuring I was going to have to buy something today, I started thinking about lunch options during my morning workout. (Because who doesn’t think about food while working out?)
Not really in the mood for my go-to purchase, a salad, I thought I would opt for Starbucks’ Protein Bistro Box. It’s a favorite of mine, and I find it to be a filling and satisfying lunch or after-workout snack.
Starbucks’ version contains:
- 1 hard-boiled egg
- handful grapes
- sliced apples
- white cheddar wedges
- multigrain muesli bread
- honeyed peanut butter
Then I thought, since I hard-boiled some eggs over the weekend, why not try to put together my own version?
My Protein Lunch Box contains:
- 1 hard-boiled egg
- handful raw almonds
- 1 macintosh apple
- 1 1/2 slices cheddar cheese
- 1 slice of bread with peanut butter
As a side note – I’m glad I took a picture of everything before transporting it to work, because the cheese slices looked a little worse for the wear by the time I got into the office. 😉

I have been meaning to do this copycat project. Those bistro boxes look so good, but are pricey.

Good idea! I’ll have to try that..my fave Starbucks bento is the Thai chicken wrap. I’ve been wanting to make something similar at home!
