I’m sure I’m not the only one who has a hard time planning weekly meals from time to time. Some days we just have no idea what we want, and if I don’t have a set plan, I’m so much less motivated to pull together a dinner when I’m tired after a long day of work. So I thought I would give you a look at the meals I’ve made or ordered this week. Hopefully this will help give you some inspiration on those days when you have no idea what on earth to do for dinner either!
Monday 11/30 – Rotisserie Chicken with Basmati Rice and oven-roasted Green Beans.
I love a good rotisserie chicken, so easy and tasty!
Tuesday 12/1 – Leftovers of my mother-in-law’s Bolognese sauce with a side of vanilla almond milk. Yum!
Wednesday 12/2 – Take-out from a local favorite Gastronomie 491. A Manhattan Panini – roasted turkey, green apple, white cheddar, tarragon, mayonnaise on ciabatta, served with a side salad.
Thursday 12/3 – Trader Joe’s Pesto Genovese Chicken Breast, Trader Joe’s Brown Rice Medley, and Trader Joe’s Mashed Sweet Potatoes.
Friday 12/4 – Dinner out with my girlfriend Nikki! We went to Yuca Bar in the East Village and split Mexican Tapas and sipped on Mojitos.
This included (clockwise) Guacamole, an Arepa con Carne, Quesadilla des Camerones (shrimp, roasted corn, pepper jack cheese), and another dish that I can’t remember exactly, but I know it was like a taco with octopus and chorizo. Delish!
Saturday 12/5 – Trader Joe’s Roasted Butternut Squash, Red Quinoa and Wheatberry Salad.
I wanted something light since I was headed to my sister-in-law’s wine and cheese party, and I had lots of cheese I needed to save room for!
Sunday 12/6 – A jar of Il Mulino Marinara Sauce over Rigatoni.
And there you have it! We have Blue Apron scheduled to arrive tomorrow, so that will take care of of most of our weekday meals this week.
Looking at all your food makes me hungry and I just had dinner!
