So guys, I had every intention of doing a Friday Favorites post on Friday and even had part of it drafted that morning. However, I didn’t get a chance to finish it before work, and then my day was just nutty, soooo….here we are with a weekend recap already.
Friday
When I woke up on Friday I was surprised to be greeted by more snow! We only got about an inch or two, but it was super pretty and made the morning commute a bit more enjoyable. More snow is expected today and tomorrow too!
Speaking of mornings, I got a little creative with my breakfasts this weekend. Oatmeal topped with a dollop of Nutella and finished off with a sprinkle of Cinnamon. Yum, yum, and yum. Seriously, give it a try.
Saturday
Saturday was spent doing some serious cleaning around the house. Do you ever have those moods where you just feel the need to clean everything? Before I knew it, I was dusting every surface I could find, digging into nooks and crannies, and tossing out old jewelry, clothes, and odds and ends that I found tucked away in drawers. It took me about 4 hours, but it felt so good afterwards.
AJ came back from meeting a friend for brunch and was greeted by a wave of bleach. He then took me out to run some errands, afraid I was enjoying the fumes too much. Kidding, but seriously it was good to get some fresh air.
Saturday night was pretty exciting as we ventured out to Chipotle. I was seriously craving a burrito bowl and with no set dinner plans, it was the perfect excuse. Well, we get there and find that they are out of guacamole!
I.Know.
I recovered from this disappointing blow by the time we got home and decided to make the best of what I had.
And what I had was the worst Chipotle I’ve ever eaten. (Insert my pouting face here.) It was so salty yet somehow really bland. AJ and I both ate about half of ours and threw the rest away. C’mon Chipotle…Between giving people food poisoning, running out of guac, and sad burrito bowls….you gotta start getting your act together.
We consoled ourselves by watching the final episode of The Office while tearing up (okay, I was tearing up.)
Sunday
Sunday was what you would expect, church, supermarket, Super Bowl. I made a Southwest Quinoa Salad for lunches this week (recipe to come!), and made some snacks for us to binge on during the football game. The menu included:
- Chips and Onion Dip – a packet of onion soup mix and 16 ounces of plain Greek yogurt (instead of sour cream!).
- Buffalo Cauliflower bites with blue cheese dressing – Gross. I found these guys in the frozen section at the grocery store and was really excited to try them. They were soggy and came out with a really weird taste. I don’t even remember how to explain it. AJ and I each took a bite and were like #nope. So in the trash they went.
- Pigs in a Blanket – cocktail franks wrapped in crescent rolls. Obviously, a Super Bowl snack classic.
These are pretty self explanatory. But, if you’re anything like me, you’ll google how to make them so here’s a quick recipe.
Pigs in a Blanket
Ingredients
1- 12 ounce package cocktail franks
1 can of crescent dinner rolls
Instructions
Preheat oven to 375 degrees. Unroll can of dough and separate into triangles. Cut each triangle lengthwise into 3 narrow trianges.
Place 1 mini hot dog on the point of each triangle. Roll up and place the seam side down on an ungreased cookie sheet.
Bake for 10-15 minutes, or until golden brown.
Serve with your favorite dipping sauces!
Oh, and I topped off the night with some Cookie Dough ice cream.
Anyway, that’s a look at our weekend. Clearly nothing earth-shatteringly exciting but I love those days with no real plans or the need to leave the city. It’s so very much needed after busy work weeks. Hope you all had a chance to relax and refresh too 🙂
