Ridiculously Easy Lemon Chicken

Greetings from Texas! I hope your weekend was a good one! AJ has been traveling a lot for work lately, so I flew to Houston on Saturday morning so we could meet up and spend a few days exploring a new city together. I’ll have a proper recap for you all later in the week with all the delicious food we’ve been eating and the sights we’ve been seeing!

In the meantime, I wanted to share a super easy dinner recipe. I made this lemon chicken the other week when I wanted something healthy but didn’t want to order takeout and didn’t feel like cooking anything super complicated. I paired it with these Oven-Roasted Green Beans, which are my absolute favorite!

Ridiculously Easy Lemon Chicken


  • Flour
  • Bread crumbs
  • Eggs, beaten
  • Chicken breasts  (as many as you wish to serve)
  • Lemon, sliced (3-4 slices per chicken breast)
  • Aluminum Foil


Preheat oven to 350*.

Place the flour, eggs, and the bread crumbs each separately in 3 shallow dishes. Pat each chicken breast dry and season both sides with salt and pepper.

Bread each chicken breast by coating evenly in Flour > Egg > Bread crumbs, shaking off any excess in between dippings. Place prepared chicken on a clean dish.

Slice the lemon. Tear 1 sheet of aluminum foil per chicken breast.

Place 3-4 lemon slices on the bottom of the foil and top with the prepared chicken breasts. Wrap everything up to make individual packets.

Bake for 40-50 minutes.
