Guys, I have a new favorite breakfast to share. I’m always on the lookout for a healthy, yet filling and satisfying way to start my day because I hate when I’m hungry again by 10am and still have hours to go before lunch. I’ll inevitably start snacking on something I shouldn’t and it just isn’t the best way to start the day.
Yesterday I decided to chop up a hard-boiled egg with half an avocado. This is a super easy protein-packed breakfast, also full of fiber and omega-3s. I topped it off with a couple sprinkles of chopped chives, but AJ suggested it would also be delicious lightly salted. I think a larger grain salt, such as sea salt or kosher salt would work best to enhance the flavors.
- 1-2 hard-boiled eggs
- 1/2 avocado
- Toppings such as fresh herbs or sea salt, optional
Peel hard-boiled eggs and chop into quarters. Dice avocado into bite-sized pieces. Combine and finish with any toppings of choice.
